Vegan Butternut Squash Al Pastor Tacos

Vegan, but delicious.

Ingredients:

1 butternut squash, peeled, seeded, and cut into ½-inch cubes

1 ½ teaspoons achiote

1 ½ teaspoons ancho chile powder

1 ½ teaspoons garlic powder

1 ½ teaspoons onion powder

1 ½ teaspoons ground coriander

1 ½ teaspoons dried thyme

2 teaspoons ground cumin

1 teaspoon kosher salt

1 teaspoon black pepper

½ teaspoon cayenne

1 tablespoon apple cider vinegar

3 tablespoons orange juice

4 tablespoons extra-virgin olive oil, divided

2 cups cubed pineapple

 

Serving:

12 small corn tortillas

½ medium white onion, diced

1 cup fresh cilantro leaves

1 avocado, sliced

4 limes, cut into wedges

 

Recipe:Preheat the oven to 350 degrees Fahrenheit and line 2 baking sheets with parchment paper. In a large bowl, add everything except for the pineapple and half of the olive oil from the main recipe and toss until well coated. Spread the squash mixture on the baking sheets evenly. Bake it for 22 minutes, toss, and then back into the oven for another 22 minutes or until the squash and the spices have darkened. Once finished baking, remove the squash from the backing sheets and add the pineapple. Toss in the residue of the squash and bake for 25-30 minutes until it is smaller and softer. Toss the squash in the other half of olive oil. Warm each tortilla one at a time over medium heat until the edges are charred and then keep them warm once off the heat. Spoon the squash and the pineapple into each tortilla and top with the remaining ingredients with the limes on the side. 

Chicken and Cheese Quesidilla

Golden, gooey, and totally crave worthy quesadillas are the ultimate cheesy fix. They're proof that sometimes, all you need is a tortilla and a dream and a lot of cheese.

Ingredients:

Chicken

Cheese

Veggies

Spices

Hot Sauce

Whole Wheat Tortilla

Toppings

 

Recipe: Add the chicken to a bowl, then stir in half of the spices.Sauté the vegetables with spices.Assemble the quesadillas by piling the fillings onto one half of a tortilla.Fold the empty tortilla half over the top. Repeat.Cook the quesadillas two at a time in a skillet.Flip after about 4 minutes, cooking on the other side for a few minutes. Let cool, slice, and Enjoy!

Chicken Enchilada

Packed with flavor and smothered in sauce, chicken enchiladas are comfort food with a kick. They're so good, even the chicken’s asking for seconds well, if it could.

Ingredients:

1 ½ cups cooked shredded chicken

2 cups enchilada sauce

8 corn tortillas 

2 ½ cups shredded Mexican-blend cheese

Salt and/or Black Pepper

optional toppings: diced onions, chopped cilantro, sour cream, shredded lettuce, cotija cheese

Recipe: Preheat oven to 350 degrees fahrenheit. In a large bowl, add the chicken, ¼ cup enchilada sauce and salt and pepper to your liking. Mix and season as needed. Keep this aside and wrap your tortillas in a damp paper towel. Microwave for 30 seconds, flip your tortillas, and microwave for another 30 seconds. Remove from the microwave and fill each tortilla with an equal amount of chicken mix. Additionally, take 1 cup of your cheese and spread it evenly over the 8 tortillas. Roll them up and place them in a large baking dish with the seam side down. Top them with the rest of the enchilada sauce and cheese and bake for 20 minutes until the cheese is bubbly. Finish with any diced onions, chopped cilantro, sour cream, shredded lettuce, and cotija cheese and enjoy!

Tacos

Tacos are a delicious cornerstone of Mexican cuisine a simple, flavorful, and endlessly cuisine. From street stands to home kitchens, they bring people together one tortilla at a time.

Ingredients:

Olive Oil

Any type of veggies or protein

Black beans

Lime or Lemon Juice

Cilantro

Spices - Cumin, smoked Paprika, chili powder, and dried oregano. 

Garlic

Shredded cheese

Recipe:

On a large pan or skillet, add your oil and start cooking your veggies or protein. For veggies, cook until they appear softened. For protein, cook as long as needed. Stir occasionally, and add your garlic into the mixture and cook for another minute. Afterwards, stir in your spices - Cumin, Smoked Parika, Chili Powder, and Dried Oregano - and add some water. Next, slowly add the black beans, making sure to not crush them in the process. Then, add your lime juice and cilantro into the mixture. Finally, on a smaller pan, warm up as many tortillas you need, then assemble your tacos as following: Veggies or protein on the tortilla, then cheese, and any other additional toppings, sauces, or seasonings. Enjoy!
